​UPDATE ON TEXAS SCOTTISH FESTIVAL
​& HIGHLAND GAMES 2020/2021

    It’s been 123 days since our 2020 May Texas Scottish Festival & Highland Games rescheduled, due to the pandemic. During this time we have been working hard to find a new venue for the fall dates. It has opened up some great opportunities for future events and communication with other organizations. Unfortunately, we were unable to secure a new venue in time for organizing October dates. We are sadly announcing that we will have no official games this fall. We will be returning to Wise County Fairgrounds, April 30th - May 2nd, 2021. We are moving forward with festival planning assuming that there will still be COVID restrictions and will be using all recommended CDC guidelines. Thank you for hanging in there with us during these difficult times. We want you to know how much we appreciate your support of our Texas Scots Organization.

    To those of you who have purchased TICKETS, Scottish CLAN VILLAGE or VENDOR SPACES for May 2020 event and have not requested a refund(by September 14, 2020 at 10pm) we will apply your purchase to our May 2021 event. We would appreciate it if you are able to apply your 2020 festival purchase to 2021 for a number of reasons. Mostly the unexpected resources and costs required to process refunds. As an incentive, if you apply your 2020 ticket to 2021 you will be entered to win an Ancestry DNA Kit to one person. This Ancestry DNA Kit winner will be announced on Wednesday, September 16th, 2020.

    With the announcement of the cancelation of the 2020 Texas Scottish Festival & Highland Games we will extend our refund window to September 14th, 2020. We have not historically offered refunds, BUT we believe with this crisis not only a being a medical crisis, but a financial crisis for some, and want to try to support our community the best we can. We are a volunteer organization and do not have a traditional staff to manage the refunds and would appreciate your patience while we deal with this unexpected situation we are all in due to the pandemic.

    Ticket sales for April 30 - May 2, 2021 TSF&HG will open at a 'Discounted Price' on September 2, 2020. This limited time offer will be available until November 1, 2020.  Please note that our 2020 discounted price is lower than 2021 early bird pricing as we will be adding charges to cover additional CDC equipment onsite and increase in festival venue fees. As of November 1, 2020 the TSF&HG 'Early Bird Pricing' will in some cases increase to accommodate fewer attendees(to allow for social distancing) and increased sanitary operational expenses, to make sure we are following CDC guidelines. This 2021 'Early Bird Pricing' will run until April 1, 2021. 

    We want to make sure that our messaging is clear and visible. You will be seeing this information over the next 10 days via our social media outlets & email list. If you have friends who attend the TSF&HG with you, please reach out to them if you feel they may have missed this information. We appreciate you being an active participant in this process.

    We plan on doing the best we can, to provide the safest, most exciting environment for you to enjoy the Games, Music, and take us on another magical ride to a wee bit of Scotland in Texas. There are several festival models under review, from assigning seat locations, designating areas for families and one way traffic systems. Our operations are subject to guidelines set forth by the State of Texas, Wise County and the City of Decatur. That being said, everything we do is with your safe experience at the center of our decision making process.  Your safety and positive interaction at all of our events is our top priority.

    With your loyalty and support, we hope to make 2021 Texas Scottish Festival & Highland Games the best yet. We have plans to bring in even more pro-athletes--including women. There are no words to describe what we have been through over the last several weeks. The coronavirus / COVID-19 global pandemic has significantly altered and impacted our Texas Scots Community. Our hearts are with you and all attendees, vendors, athletes, musicians, volunteers, sponsors, and artists, near and far who’ve been impacted. 

The Texas Scottish Festival & Highland Games board is working to keeping our Scottish tradition alive. We recognize that many of you have made changes to your day to day activities and look forward to the festival. Our goal is to announce the new location by May 1st, 2020. 

We are grateful for the support from many of you and your understanding during this crisis. Please take care of yourself and your loved ones.

As you might imagine, having the Texas Scottish Festival & Highland Games May 1-3, 2020 has become impossible with the current shelter in place orders in Texas and United States. We are working to reschedule the event in the fall. We are looking for a new venue as the Wise County Fairgrounds is unavailable in the fall.

Please know the TSF Board is committed to finding a new location that will accommodate all the activities that make up the Texas Scottish Festival & Highland Games. With that in mind, we may have to scale down the festival and attendance--giving priority to those who have already pre-purchased tickets. We have a couple locations lined up working with the new festival dates October 16-18, 2020.

What’s next?:

March 16, 2020 Coronavirus Update:

Texas Scottish Festival & Highland Games(TSF&HG) Friends and Family,

Friday March 13th a Texas State-wide disaster declaration was made. Yesterday, the CDC updated their recommendations to events from a maximum of 250 to 50 people be postponed*. The Texas Scottish Festival & Highland Games is reviewing the new guidelines and our options for the festival to move forward. Your safety is important to us and we are taking this seriously.

We will be reviewing all our options this week and will be in touch with additional information as it relates to the May 1-3, 2020 event. We will make another announcement after our 28th of March TSF&HG board meeting.

We know Thanksgiving is not a Scottish holiday -- but Turkey is a thing for Christmas dinner in Scotland. We thought we would share a fun Scottish pin head oats stuffing recipe. #TexasScots #Thanksgiving 

Instant Pot Skirlie (Scottish Stuffing)

Instant Pot Skirlie can be made to accompany beef, mutton, turkey, chicken, pork. For purposes of this recipe, the ingredients will pair up for a Thanksgiving or Christmas turkey.

When making Instant Pot Skirlie with a roast, beef drippings and beef broth would be used. For a chicken dinner, chicken drippings and chicken broth. Basically, whichever meat is being cooked will determine the dripping and broth.

Ingredients for Instant Pot Skirlie
Pin Head Oats (UK) or Steel Cut Oats
Onions – lots of onions!
Turkey Drippings
Turkey Broth or Chicken Broth
Salt and Pepper
Butter, Suet or other fat
Fresh Thyme or Ground Thyme

What is Skirlie?
It is a savory Scottish dish made with pin head or steal cut oats, fried in oil, beef drippings, suet, butter, lard or other fat, along with lots of onions and fresh thyme. Traditionally, Skirlie is made in a saucepan on the stove.
Skirlie is used the way Americans use stuffing during the holidays. It can be served inside the turkey or on the side.
Beef drippings are used to cook Skirlie to accompany a beef roast.
In the Northeast part of Scotland, it is very popular as a side dish for Christmas dinner and is served along with potatoes and a turkey.

Skirlie Stuffed Savoy Cabbage

​Ingredients:
For the skirlie:
    •    50g unsalted butter
    •    2 white onions, diced
    •    3 cloves garlic, chopped
    •    250g pinhead oatmeal (it HAS to be pinhead)
    •    50ml cream sherry
    •    hot chicken stock (or veg if you want a veggie version)
    •    salt and pepper
    •    1 tsp dried thyme
    •    pinch dried chilli flakes
    •    2 tsp dried porcini powder (blitz dried porcini in a coffee grinder)

8 large savoy cabbage leaves
For the béchamel: (approx measures)
    •    50g unsalted butter
    •    40g plain flour
    •    400ml milk
    •    1 tsp dried onion granules
    •    1 tsp dried garlic granules
    •    2 tsp dried porcini powder
    •    few gratings fresh nutmeg
    •    salt and pepper
    •    2 handfuls finely grated strong cheddar cheese

Method:
Preheat your oven to its hottest setting. Blanch the cabbage leaves in boiling water, a few at a time to soften them, if the stalk is very thick at the base cut this out. Leave them to cool.
In a saucepan combine the butter, onion and garlic and cook gently just to soften, don’t colour. Add the pinhead oatmeal and stir well to make sure the butter coats everything.

It’s basically like making a risotto now, add the sherry and some hot stock and stir,once that is absorbed add some more stock and repeat until you can drag a spoon through the mixture and it leaves a trail on the bottom. Add the thyme and seasoning and porcini powder, stir well. You want the oatmeal to still have a bit of bite to it rather than be completely soft. Once it reaches that point simply turn off the heat and leave it to cool a bit whilst you make the sauce.

Make the béchamel sauce. Melt the butter, add the flour and stir, cook for a couple of minutes then whisk in the milk, keep stirring and cooking until thickened then add the rest of the ingredients and cook for a further minute whilst stirring.

To assemble take a cabbage leaf and a big dollop of skirlie and make a little parcel by folding over the top, then tuck in the sides and roll the whole thing up. Put in a roasting tray, repeat with the rest. Spoon over the sauce, grate over some extra cheese then roast until the sauce and cheese starts to turn golden.
